What is sorbose used for? Sorbose is mainly used to produce ascorbic acid (vitamin C). The Reichstein process involves microbial fermentation of glucose to sorbitol which is then oxidized to sorbose with subsequent conversion to ascorbic acid.
Sorbose can also be used in studies into carbohydrate metabolism and enzyme function that involve the oxidation and reduction of sugars.
