This molecular model kit can build important fatty acids including omega 3, 6 & 9 structures. There are enough parts to build any 6 C18 fatty acids or two triglyceride molecules such as triolein & tristearin (shown in the image).

Fatty acids have a carboxylic acid functional group attached to a long aliphatic chain that is either a saturated alkane or unsaturated alkene. The unsaturated fatty acids have one or more carbon-carbon double bonds which in turn make either cis or trans isomers. Fatty acid chemical structures vary greatly in length. Short chains have 5 or less carbons, medium are 6-12, long have 13-21 & very long chains have 22 or more.
Some of the short chain fatty acids you can build include butyric acid, isobutyric acid, valeric acid, isovaleric acid & 2-methylbutyric acid. These may be very important to bone & other metabolism. Read more in:Is the skeleton an organ?
