Peracetic acid (PAA) is used in poultry (chicken) processing to inhibit microbial growth on raw meat. Higher concentrations of 200-300ppm are used in wash solutions & immersion baths involving pre-chiller & chiller water treatments.
PAA's antimicrobial action is due to its oxidizing action properties which disrupts cell membranes and denatures proteins that form internal components of microorganisms . Bacteria such Salmonella & Campylobacter are the most common targets but other microorganisms such as viruses, fungi, and spores are affected as well.
PAA does not leave toxic residues after it breaks down into water, oxygen, and acetic acid (vinegar), making it ideal for food processing.
These test strips measure peracetic acid with indication at 100, 250, 500, 1000ppm with the recommended strength for germicidal effect in the 150-200ppm range with pH at 3.5-5.5 (and no organic matter present). Since it is susceptible to organic contamination frequent testing is recommended to ensure it is at proper strength & for strict adherence to HACCP food & safety regulations.
