Raffinose is a complex carbohydrate with the chemical formula C18H32O16 and is a trisaccharide consisting of galactose, fructose, and glucose. Alpha galactoside, an enzyme not produced by humans but by naturally occurring symbiotic bacteria in our intestines, breaks raffinose down into d-galactose & sucrose. Raffinose is found a variety of foods including legumes (beans) which the bacteria ferment and cause flatulence.

In the raffinose molecular structure, the galactose connects to glucose via a 1??6 glycosidic linkage.
