Raffinose is a complex carbohydrate with the chemical formula C18H32O16 and is a trisaccharide consisting of galactose, fructose, and glucose. Alpha galactoside, an enzyme not produced by humans but by naturally occurring symbiotic bacteria in our intestines, breaks raffinose down into d-galactose & sucrose. Raffinose is found a variety of foods including legumes (beans) which the bacteria ferment and cause flatulence.

You can also build raffinose with our advanced student organic chemistry model set or the class organic chemistry model set.

The preferred IUPAC name (2R,3R,4S,5S,6R)-2-{[(2S,3S,4S,5R)-3,4-Dihydroxy-2,5-bis(hydroxymethyl)oxolan-2-yl]oxy}-6-({[(2S,3R,4S,5R,6R)-3,4,5-trihydroxy-6-(hydroxymethyl)oxan-2-yl]oxy}methyl)oxane-3,4,5-triol cannot be parsed by our 3D Molecular Model builder. However, if you enter "raffinose" or its CAS# 512-69-6, it will render a correct 3D chemical structure.
